Three-flavoured grouper fish meal (ikan kerapu masak tiga rasa)

Yes! another fish meal. This time, it is my version of three-flavoured grouper fish meal. For me, it is more convenience to do chicken meals takeaways’ instead of fish. You can get it at any time of the day. To get a fresh cooked fish meal in restaurants, you need to get them during lunch hour or dinner. Or else, it is better to cook it yourself.

I prepared this meal in a different way, which is, instead of chopping the ingredients into small tiny pieces, i blended them rough.

Let me warn you, this meal has a pungent taste and smell (caused by the lime leaves and lemon grass). So, it may not be suitable for everyone. If that is the case, you can stick to sweet and sour fish meal.

Living in the city like KL, i always cannot aim for specific type of fish to cook on any particular day since most of the time i rely on the local supermarkets to get my fish. The type of fish i want may not be available today and even if it is available, the price could be very expensive.

When deciding to cook this meal, i was aiming for the already cut fish. Easy job and not so much of bones. Just take home, clean and cook. Unfortunately that day, almost all of the cut fish at the supermarket cost RM5++ per 100g.

I did saw bawal fish but i did not feel like buying them. Then, i was shocked to see abundance of grouper fish covered under ice. The price was a lot cheaper than other fish that day. 

So why not buy. They suit well with the three-flavoured gravy. I bought 3 medium size grouper fish. Told the staff to clean and cut them. When i cleaned them again at home, there were so many bones!

This three-flavoured fish meal also used a lot of natural ingredients. The gravy i prepared could be the simplest version of any three-flavoured fish meal you can find.

Two compulsory ingredients that allowed it to be called three-flavoured are:
1. lime leaves
2. lemon grass

Most of the ingredients are natural except for the 3 sauces which are usually available in most homes kitchens’.

These are the basic sauces that you need:

dark soy sauce, tomato sauce and chilli sauce

(Thankfully i found other similar recipes that uses soy sauce).

In this recipe, the main purpose of the soy sauce is to darken the gravy.

INGREDIENTS FOR THREE-FLAVOURED GROUPER FISH

(this meal is for 3 people or 2 very hungry people)

garlic

ginger

lemon grass

bird eye chillies

Blend (rough) together all the ingredients.

Actually, my main reason was, i did not want my family to waste any of the ingredients. Most kids or even grown ups do not like to eat chopped lemon grass or chopped bird eye chillies. Even i feel the chopped ingredients look very messy during plating. But then, it is ok. It is up to you.

(In some parts of the world, we don’t use specific amount of ingredients when cooking certain types of meal). Apparently, i am used to this attitude too after many times of cooking.

lime leaves, cucumber and cherry tomatoes

Cut the cucumber into small cube sizes and sliced half the cherry tomatoes. By right, there should be cut slices or cubes of pineapples in the gravy. I’ve substituted that with the sliced tomatoes. Some of my family members don’t eat cooked or even raw pineapple. So i did not want to waste any pineapple.

HOW TO COOK THREE-FLAVOURED FISH GRAVY

Note: The gravy is suppose to be thick.

The cooking process:

1. Heat up about 5 tablespoons of vegetable oil.

2. Sauté the blended ingredients until nice aromas come out.

3. Add in about 6-7 tablespoons of tomato and chilli sauce each. Stir everything well. (The amount of the sauces depend on the thickness of the gravy you like).

4. Add in 2 tablespoons of soy sauce. As a result of adding in the soy sauce, the gravy will turn darker. At this point, you may add just a little bit of water.

5. Add in the lime leaves.

6. Stir well and taste. If the proportion of the sauces are balance, there is no need to put in any salt.

For this meal, i put in some sugar to lighten the lime leaves taste.

7. After the gravy stabilize, add in the cucumber and cherry tomatoes. Stir.

8. Turn off the heat.

The gravy should look something like this:

(Ooo….ooo… At first, i thought it looked like sweet and sour gravy. However, it is actually darker and the taste was totally different!!).
