This meal also include a few kerisi fish but they were cooked separately. If you are on diet, you can just cook the shrimps and eat with rice. Since it will only be me eating the pumpkin, i bought the smallest already cut size which was enough to be eaten by 2 people. Despite the minimum size, i did encouraged my kids to eat the pumpkin a little bit.
As for the shrimps, i normally count how many i need to buy and cook. Seriously! Otherwise, there will be fighting during meal time and i might end up having no shrimp to eat. Depending on the shrimp size, one person is entitled to have 5-6 shrimps.
While shopping for the ingredients that day, i forgot to buy the real turmeric but i have turmeric powder in the kitchen. You can cheat the gravy colouring by adding 2-4 teaspoons of the turmeric powder. For you info, this is a no oil cooking method.
PUMPKIN AND SHRIMPS IN COCONUT GRAVY
Those are the main characters. You need to cut the pumpkin into cube size and clean the shrimps properly. I usually don’t peel the shrimps’ skin when cooking any gravy-type meal.
THE INGREDIENTS FOR PUMPKIN AND SHRIMPS IN COCONUT GRAVY
Water (500ml), coconut milk (200ml), red onions (slice small), bird eye chilis (slice) and turmeric leaves.
Cut the turmeric leaves into smaller pieces. Actually, it is not compulsory to add the turmeric leaves. The leaves just help to add natural flavour to the gravy.
You can adjust the water amount by adding more or less, depending on the thickness of the gravy you like.
This meal i cooked can be eaten by 3-4 people.
TURMERIC POWDER FOR COOKING
You can easily and quickly change the gravy’s colour into thick yellow by adding this turmeric powder. Otherwise, you need to crush a little bit of the real turmeric and add it into the gravy.
HOW TO COOK PUMPKIN AND SHRIMPS IN COCONUT GRAVY
The cooking process:
1. In a pot, boil the cut pumpkins and red onions in water.
2. Wait for 3-4 minutes, then add in 3-4 teaspoon of the turmeric powder.
3. Stir to spread the turmeric powder.
4. Then, add in all the coconut milk.
5. Add in the bird eye chillies and turmeric leaves.
6. Stir everything gently.
7. Wait until the pumpkin is halfway tender.
7. At this stage, i seasoned the gravy by adding salt and sugar.
9. If you are already satisfied with the gravy taste, add in all the shrimps.
10. Stir gently until the shrimps are cooked. Then, turn off the heat.
Additionally, i fried a few cut pieces of kerisi fish. You can also see there are a few of fried shrimps. I thought there was no point of keeping very few of them in the fridge. I can empty the freezer as well. I seasoned the fish and shrimps with just salt and pepper.
These meals are best eaten with warm rice.
